We started Sixth Burner because most recipes tell you what to do and almost none tell you why. Once you know that a dry potato surface browns and a wet one steams, you can roast anything. That kind of knowledge outlasts any single recipe.

Every recipe is cooked at least twice, by two different editors, before it is published. We weigh ingredients, probe ovens, and write down what went wrong. When a test changes our minds, we say so in the piece.

We cook on gas and induction, in small apartments and family kitchens, with one good knife and a few sheet pans. If a recipe needs special equipment we tell you up front, and we try hard to make it not need any.

We don't take payment for recipes, and we don't run sponsored techniques. The magazine is supported by readers who subscribe to the weekly newsletter and the printed seasonal issue.

The writers

Portrait of Mara Ojukwu (illustration)

Leeds, UK

Mara Ojukwu

Recipes editor · Leeds, UK

Mara writes the weeknight mains: one-pan dinners, sheet-pan roasts and sauces built from whatever is stuck to the bottom of the pan. She cooks for a family of four and refuses any recipe that needs more than one cutting board.

Gothenburg, Sweden

Teo Halvorsen

Test kitchen lead · Gothenburg, Sweden

Teo runs the side-by-side tests: five trays of potatoes, four pots of pasta water, a dozen sticks of brown butter. He trained as a lab technician before cooking, and still writes everything down in a notebook.

Portrait of Priya Raman (illustration)

Leicester, UK

Priya Raman

Pantry and spices editor · Leicester, UK

Priya covers lentils, grains, spices and the pantry dinners that happen when the fridge is nearly empty. She keeps a laminated pantry map taped inside a cupboard door and will happily send you a copy.

Portland, Oregon

June Castellano

Seasonal produce and baking · Portland, Oregon

June writes about what's good at the market this week and what to bake with the leftovers. She grows tomatoes on a small balcony, keeps a sourdough starter that is older than her car, and hates wasting discard.
